Satarash (VIDEO) - Healthy Life Design - Vegan Side dishes

Satarash is a simple, easy and delicious vegetable stew which will delight you. There are some days when you don’t know what to cook, well, this side dish is perfect for those days! The name of the dish comes from hungarian szataras and it is very known in Europe.

In this very flexible recipe you can add some more vetegetables like carrot, zucchini, eggplant, and also the spices which are your lovely ones like oregano, bay leaves and so on… It looks like Ratatouille but stil, because of his simple content we know it under name Satarash.

The good thing is that, when you make it so simple, you can feel the taste of all the ingredients and it is in the same time soft, tasty, and the red color prevails. Did you know that according to researches in order how the colors interact our diet, the red color is opening your apetite? That’s why you can more enjoy eating when you prepare this dish. Specially it goes perfect with Crispy Cauliflower with Parmesan.

Ingredients for Satarash:


1 Onion

600 g Tomatoes

400 g Red Paprika

2 Garlic Cloves

1 tsp Himalayan Salt

1/2 tsp ground Black Pepper

1/2 tsp Brown Sugar

100 ml Sunflower Oil

Preparation of the Satarash:


  1. Peel and dice the Onion and Garlic .
  2. Wash and dice Tomatoes and Paprika.
  3. Sautée Onion and Garlic a few minutes, add Paprika, Salt and Pepper, then Sautée a few minutes more, stirring occasionally.
  4. Add Tomatoes and Sugar and cook until thickened.

Enjoy the tasty vegetable stew!
